Organic certified red dry wine. Vivid ruby color, cherry, strawberry and leather flavors. Gentle with integrated tannins and attractive finish. A perfect accompaniment to fish in red sauce, pastas, and light meats. This very special and meticulously made wine is made from grapes that are only found in the Achaia region in Peloponnese – the Black of Kalavryta. Tetramythos winery produces the only single-varietal wine (17,000 bottles per year) produced to their vast majority for exports. Of these just 1,200 are vinified with a “truly natural way”‘ as per winemaker Panagiotis Papagiannopoulos, an oenologist that fears not to experiment. All the vineyards of the estate in the mountainous area of Agialeia are organically cultivated, i.e. by limiting pesticides only to the ones that were traditionally permitted such as copper and sulfur. The grapes are de-stemmed by hand, pressed by foot and the must is fermented with indigenous yeasts. Maturation takes place for seven months in old oak which does not add any oak aromas to the wine but instead affect only the texture and volume on the palate. Finally, the bottling, as you would expect, is completed with just the minimal amount in sulfur, i.e. 20 mg /lt with the maximum being the 200 mg/lt.What do we realize from this process? Firstly the great effort that is put to the wine, an effort that is to present a pure and authentic expression of the variety. Secondly, that Tetramythos team are taking great interest in the vinification and after the Retsina experimental maturation in an amphora, are moving towards winemaking with minimum possible interventions.
