Delicious traditional wrinkly black olives marinated in olive oil thyme and vinegar. Raw and unpasteurised these olives have not been heat treated and the method used for producing them is unique to this type of olive. Unlike most olives produced in Greece and around Europe Throuba Olives have NOT been cured using the traditional salt water brine method. On the island of Thassos where the Throuba olive comes from the traditional method of debitteration continues to be used after centuries. Once tree ripened the olives are picked and washed in mountain spring water. The finest olives are selected and the olives are then layered in large tanks with untreated Sea salt (no water or brine) this enables the water and bitter taste to be drawn out. The olives are then rinsed in spring water again before being marinated in olive oil, thyme and a little vinegar. This variety of Throuba olives contains 4.3% salt, they are black, meaty and full of flavour. Store in a cool dry place, refrigerate once open. Certified Organic by Bio Hellas
